Fluffy Pancake with berries and chocolate drizzle
Ingredients:
1 cup plain flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
1 cup milk
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1/2 cup fresh berries (such as strawberries, blueberries, raspberries)
1/4 cup white chocolate chips
Vegetable oil or cooking spray for greasing the pan
Method
1. Prepare the Batter:
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
Slowly pour in the milk, the egg, melted butter, and vanilla extract. Use a whisk and blend into a nice thick batter. Let it rest for 5 minutes.
2. Place a nonstick skillet or griddle over medium heat. Lightly grease the surface with vegetable oil or cooking spray.
3. Once the pan is hot, pour about 1/4 cup of batter onto the skillet for each pancake. let it spread naturally.
Cook until bubbles form on the surface of the pancake and the edges look set.
Flip the pancakes and cook for an additional 3-5 minutes or until golden brown and cooked through.
Repeat with the remaining batter, greasing the pan as needed.
4. While the pancakes are cooking, melt the white chocolate chips in a small microwavesafe bowl in 30-second intervals, stirring in between, until smooth and melted.
Wash and slice the fresh berries.
5. Assemble:
Stack the cooked pancakes on a serving plate.
Top the pancakes with fresh berries.
Drizzle the melted white chocolate over the pancakes and berries.
6. Serve the fluffy pancakes with berries and white chocolate drizzle warm, with maple syrup on the side if desired.
