Delicious Banana Fritters
When we went to Thailand on 2017 my son and I did a cookery course. The sweet dish we made was banana fritters. My sahir is not a fruit person but he loved the banana fritters he created. So we wanted to recreate this today as its so tasty. It's perfect as a dessert or just as a sweet treat with your tea. We adjusted the recipe slightly and drizzled it with melted chocolate.
Ingredients for Thai banana fritters
3 bananas 1 cup plain flour 1 tbsp ground rice 1 tbs coconut milk 2 tbs dedicated coconut 1 tbs sugar Pinch of salt 3/4 cup milk Oil for frying Melted chocolate (optional)
METHOD 1. Peel and cut the bananas in half, then cut them length ways. 2. In a mixing bowl add all the ingredients for the batter mixing in the milk in the end. Ensure the batter isn't too runny but a thick paste. And mix well or whisk with a hand whisk. 3. Heat oil in a deep pan. 4. Place the banana pieces in the batter ensuring it's covered generously. 5. Then fry in the oil until crispy and brown. 6. Use a slotted spoon to turn the fritters over. They may stick together in the oil, use a fork to separate them. 7. Take them out carefully from the oil and place on a plate with kitchen towel. 8. If using chocolate then place a medium sized bar of plain chocolate in the microwave and heat until melted. Spoon the chocolate over the fritters. Sprinkle some icing sugar and enjoy!
